AGEING CAVE |

During the ageing process, the oak is the perfect combination to get, as time passes, well-balanced and full-bodied wines with good backbone. We mainly use French and American fine grain oak as well as Central European with different toasting levels to maximize the potential of each plot. Throughout the ageing process our aim is to get the best expression and combination of the terroir with the varietal. Since our foundation in 2004, we’ve been selecting among the best cooper’s factories the oak that best suits our Prieto Picudo grape. With the best barrels our technical team focuses all the efforts on trying to get the best of our grape and our terroir. Depending on the plot, the ageing process is shorter or longer and then the wine is bottled unfiltered. The barrel cellar has an automatic draining system to help better control the inner microclimate, with controlled humidity and no temperature oscillations. We yearly renew 30% of our barrel cellar.
