WINEMAKING

Hygiene and comfortable working conditions are the priority. State of the art technology is required for the most modern vinification processes. Air-conditioning equipment to control temperature and humidity. Stainless steel vats to vinify plot by plot in the best conditions with the most modern techniques to control the temperature at each stage. Racking with peristaltic pumps. The latest micro-oxygenation equipment. Sorting tables for manual selection together with a great many technical equipments to guarantee at each level the quality of the grape.

As far as red varietals are concerned, we deal exclusively with Prieto Picudo. After being hand-picked in small plastic crates, the grapes go directly to a reception room in the winery with controlled temperature. After a manual selection on the sorting table, the grapes are put into a crusher de-stemmer and then directly pumped into the vats. After a cold maceration to get all the aromatic potential of the varietal, the alcoholic fermentation takes place with pumping-overs to extract its best. For the malolactic fermentation some plots go to new barrels before the ageing process in oak. The clue is to vinify plot by plot to get the best expression of the grape in each area.
