HARVEST

In Los Oteros harvest begins end-September or beginning of October. It’s the zenith of a thorough observation and the synthesis of all the efforts and constant work in the vineyard throughout the year. Pruning is the first step of the vineyard work beginning of the year followed by ploughing. In May we get rid of all the unwanted vegetation with green pruning, improved in July with crop thinning to reduce the yields in order to guarantee the best conditions of health and quality for each vine.

Apart from the type of soil, the orientation, the age of the vines and the varietal, which are very important factors when it comes to decide when to start harvest, the plots or vineyards are selected according to the phenolic ripeness.  

Harvest takes place in stages depending on the grape ripeness. Therefore our team has to follow up closely each plot on a daily basis in order to check the different ripeness stages in each area, so that they may decide when to harvest each vineyard. After a first selection in the vineyard, the best bunches are taken to the winery in plastic crates of 15 kg. in order to avoid getting crushed berries. At the winery skilled hands select them on a sorting table before the vinification process in stainless steal vats.
