PRIETO PICUDO A UNIQUE WINE Dominio Dostares is a project born in 2005 in the Oteros Region of Leon. The main objective was to support the revival of the Prieto Picudo variety, a grape unknown in the world until very recently despite its enormous potential.

With the most avant garde technical and productive means, Dominio Dostares produces three singe varietal wines: Tombú, a rosé that constitutes a homage to the traditional "clarets", that refreshed the most demanding taste buds of Asturias, Cantabria, Galicia y Castilla y Leon. Estay, a red wine and a challenge on how to achieve a wine that will give the customer much more than what they are expecting; and Cumal, a great aged wine that is the epitome of the Prieto Picudo variety.
QUALITY WINES WITH THEIR OWN PERSONALITY With a neuralgic centre in Pajares de Los Oteros, origin and stronghold of the most valued and recognised Prieto Picudo, Dominio Dostares is probably the project that holds the largest amount of old vines that have been conserved and recovered in the last decade, hence why it currently counts with an invaluable wine heritage.

Its philosophy is to put the latest technology at the service of tradition, with ancestral cultivation and preparation methods, without massive productions or guided by short-lived fashions, but to lead their own path regardless of the market swings.
DOMINIO DOSTARES IN THE WORLD We have always believed that the region of Los Oteros hid an enormous wine potential and that we should take small "75 cl" doses all over the world, for everyone to appreciate and enjoy it.

Nowadays, Dominio Dostares exports to more than 25 countries across the 5 continents with names and cultures as diverse as Japan, Mexico, Australia, Netherlands, Brazil and Canada. We look ahead to a very promising future for a variety that was practically extinct until a few years ago.

PRODUCTION AGEING ON THE LEES

Manual harvesting allows us to select the grapes in the vineyard, even before coming to winery.

Vinification is made pago by pago, plot by plot, in order to respect the identity of terroir.

Ageing is carried out in French and American oak barrels and lasts from 4 to 18 months in underground cellars where temperatura and humidity values stay naturally stable.

Dominio de Tares wines are produced following the ancient tradition in order to obtain all the potential from each and every pago, respecting at maximum the character of the indigenous varieties and their soils.
